5 star Apple crumble


MYPOND's 5 star Apple Crumble



This delicious dessert was prepared at mypond  hotel..and yes, it looks absolutely delightful doesn't it?
So this one, im afraid to say is not my creation, but "mama" Joyce's creation(Myponds sous chef). 
This is Myponds take on the classic apple crumble. I've tasted many apple crumbles, and quite frankly always hated it. Canned apples, thick apples and heavy under-cooked pastries has been my unfortunate journey with apple crumble. But this......was an absolute delight. The pastry was as light as a lightweight boxer and the sugar balance was absolutely perfect. That filling, with beautifully soft cinnamon flavoured apples rounded off this little pud perfectly. The custard, was homemade and complimented the crumble with seamless effect.

Im gonna go out and limb and say this, persecute me if you want, but my word, Mypond Hotel in Port Alfred indeed has the Best food in town. Its an absolute treat, trust me if you will.

Sorry People! this recipe i cannot give out but i can say that when you do have time, please come and stay at MYpond or just come to the Lily Restaurant, Truly the best food in Port Alfred.

I dare you...Try it.

Strawberry and Red Wine Jus Yoghurt


So what do you do when you feel you are lazy, but still feel like a refreshing but easy dessert after experiencing some good curry on the pallet?.....you become creative as an art dude, that's what.

This little creation of mine has 3 layers, and its gobsmackingly good for a 6 minute dessert.

Well..off went chopped strawberries, brown sugar,maple syrup, cinnamon,cardamon a.k.a starenese,balsamic vinegar, honey whiskey, brandy and red wine in a sauce pan...put it on the boil and boom!.. 
Let it reduce for 5 minutes and that intense flavour of the strawberry mixed with all these lovely ingredients smelt absolutely divine.

The next layer which is the bottom layer is the biscuit soaked in Kahlua coffee liqueur. This gives off a complimentary flavour with the Jus...

3rd layer?..get some plain Bulgarian yoghurt!

Now to serve...

Bottom Layer: Biscuits in Kahlua
Middle Layer: Yoghurt
Top Layer: Strawberry Jus

Chocolate Dom Pedro


Chocolate Dom Pedro

A true classic. Many many do not know that this dessert is in fact a South African dessert, although it does have something to do with some Portuguese/Brazilian Gods.

Probably the simplest dessert of all time, a mere combination of chocolate ice cream, cream, liqueur and a bit of chocolate (which is my twist) is all it takes. That and a bit of whizzing of course. I'm sure you could twist it up with some more flavours such as strawberry or whatever could go well with that Amarula/Amaretto/Kahlua/Frangelico liqueur. Id suggest the original vanilla,cookies and cream and my chocolate ice cream twist of course.

Ingredients

chocolate ice cream (about 1 large scoop)
A little heavy cream, cold
2 shots amarula cream/Kahlua/Frangelico liqueur
1 small tab (little piece of a slab) of milk chocolate
cocoa powder or chocolate shavings, to garnish and a strawberry

Directions

Chuck the ingredients in a blender. whizz well. Pour into a glass and garnish with a sprinkle of cocoa powder or chocolate shavings (a waffer and a couple of strawberries).

Garlic, Rosemary seared Meatballs On a bed of tomato, basil and pancetta yellow lentils with a mustard rocket and basil pesto..

Salut!

This is a dish i sort of just created today, 

Tell you woh(t)!?(British accent) All those elements just work together!

Fantastic on the pallet.

Lets get on with ih(t) inih(t)?(British accent).

The yellow lentils are cooked for about 15 minutes, which is until they're a lil less than cooked, because there's a 2nd cooking process when they are transferred into the sauce. The sauce has pancetta(you could use bacon if you like, really), onions and at the end, some fresh basil. The lovely lightly sweet taste comes from a lil sugar and a lil balsamic vinegar, and to complete it some nice chopped tomatoes.

The meatballs are a mere combination of egg yolk, jar mustard seeds(fantastic with any beef), garlic, rosemary(chopped). These should just be seared until cooked through and beautifully brown on the outside.

A lovely accompaniment is that mustard rocket and basil pesto. Its dismally easy though. Just a whizzing(in the processor) of jar mustard seeds, few leaves of rocket and basil with a tad olive oil and alil balsamic dressing creates a lovely blend of refreshing flavours that are fantastic with the meatballs.

Red Velvet Cake

Its THAT Red Velvet Cake(and that flower)

Yes..Its that Red Velvet cake that many love. Every time i make this cake people seem to go berserk!!! ...Don't worry..i understand why...Its Gooooood...(haha)

Red V is a cake that uses rather peculiar ingredients for a cake, but let me tell you..there are some chemical reactions that happen with the ingredients such as the combination of "buttermilk,vinegar and baking soda," All these strive to bring that lovely texture hence "VELVET."....

For those that haven't tried it, i suggest you do...it doesn't taste like vanilla, or whatever, but it does have vanilla essence and cocoa in it, which is again...strange for the most part.

But come on kids..cue a lot of dough fights and flour fights(no naughty business couples!) and just enjoy making the damn cake!

Lovely Carrot Cake

How simple is this little baby?....

Carrot cake is one of the most delicious cakes but often made extremely heavy and not light and moist. Trust me...this carrot cake of mine is very light and moist and extremely tasty. In fact, it is made a different way to most cakes.

It was lovely with some ice-cream last night. Served hot as a dessert.

Pan-fried hake fillet with lemon and butter sauce, thyme mash, roasted sweet potato, mange tout and caramelized carrots.

Sometimes one just feels like some refreshing fish dishes that oppose the more common occurrence of beef and chicken. What a way to break the routine like this delicious hake fillet dish!

Fish goes well with herbs, butter and lemon, and i happened to be a fan of mash which also goes well with fish. You can use an alternative such as cous cous, rice or baby potatoes. Its all up to you really!.

Being at a campus where nobody knows where anything is in the practical kitchen, being back home has just trapped me in my kitchen (not that i mind or anything haha). I cant stop producing stuff outta my moms kitchen.

A Modern Twist in Steak egg and chips!

My version of ‎#steak-egg-chips ‎#enjoy ‎#bonapetit ‎#ilovecooking ‎#lovely 
Classic dish. Presented a more contemporary, new age way instead of just clamoring on an egg, some steak and chips.

The steak is marinated in Worcestershire sauce, red wine, a tad bit of honey and fried(to medium) in olive oil with sprigs of rosemary.

A runny egg York is a must for this dish, and lovely crispy on the outside and soft on the inside side of chips.

Its finished off with a lovely rocket, red pepper and apple salad with a pomegranate vinaigrette.
